Pedagogical Strategies in Gastronomy and Their Impact on Student Satisfaction - Tourism UNSAAC, Cusco 2023

Abstract

The research was conducted at the School of Tourism of the National University of San Antonio Abad in Cusco during the year 2023 and focused on assessing the influence of pedagogical strategies in gastronomy and restaurant management on student academic satisfaction. Through an applied methodology and a non-experimental explanatory design, a quantitative approach using hypothetical-deductive techniques was adopted. The study encompassed a population of 594 students, selecting a sample of 131 students from the ninth and tenth semesters who participated in cooking and restaurant workshops, using a non-probabilistic sampling for convenience based on specific inclusion and exclusion criteria. Data collection was carried out using a structured questionnaire as the main tool. Statistical results showed a significant impact of the pedagogical strategies on student satisfaction, with a significance of 0.013, and the Cox and Snell, and Nagelkerke models explained 86.4% and 87.6% of the observed variability, respectively.
